So who else is an absolute sucker for nut butters!? I have to refrain myself from buying them in the supermarkets sometimes as I can go through a jar so quickly! Now I have never made nut butter myself but I have been following a lovely lady called Lisa on Instagram (myrelationshipwithfood) for such a long time now, and I stumbled across a recipe for sunflower butter. Her posts make me wish I lived at her house because her cooking always looks incredible!
Anyway, I decided to give the sunflower butter a good go and was so pleasantly surprised. I actually adapted the recipe slightly as I didn’t want to add any sugar and honestly I didn’t feel mine needed it. Ingredients:
1 Piece of Rye Bread (Bread of your choice)
1 Banana
Sprinkle of mixed seeds
For the Sunflower Butter:
100g Sunflower seeds
1/2 Tsp Salt
2 Tsp Olive oil
2 Tbsp Water (roughly)
- Firstly roast the sunflower seeds in the oven for approximately 5-10 minutes until they start to go golden.
- Once the sunflower seeds have cooled, blend together the sunflower seeds, salt and oil in a blender. Add water as necessary to get the consistency you desire. Keep adding water and blending until you get the perfect buttery smooth texture.
- Toast your bread, apply an even layer of your butter and add your banana and toppings of choice. Feel free to drizzle some syrup over the top if you wish.
This is a quick and easy recipe to make, perfect for mornings with a tight schedule or maybe in some food on the go. The sunflower butter is perfect as a topping for all your other tasty treats too!
